He's obviously a great shot.
But at an appleseed, isn't shooting irons kinda the point?

Getting hits is the point. He shot very well in rapid fire timed stages, too. I daresay he also shot with irons before and decided that hits count more than cool poses.

I have a 20" 10/22 match barrel and a spare beat up 10/22... but.. but.. I was saving it for a SBRd Pocket rifle project... :-)

Is there a shoulder-stock on that rifle that I'm not seeing or is he supporting with just the pistol grip and support hand?

Looks like there is a stock there - look directly to the right of his thumbnail, on the edge of the photo.

You can see a hint of one right under his chin. It looks like it comes up from the bottom of the pistol grip. I wonder if this is another way around CA stupid assault rifle laws?

I would guess that this is the stock he's using:

It runs between $210 - $218 from Brownell's, depending on color. (Personally, at that price, for a .22 stock, it better reach out and poke the holes in the target itself, with no aid from me.)

Are these Appleseed shoots good for very new shooters?

Yes, provided you know the basic range safety rules. Great way to begin learning -- before you have bad habits.

If all you anticipate doing with your rifle is shooting CMP 3 position matches at Camp Perry and deer hunting, it will do fine ... if your local event has good instructors, as their quality is highly variable.

If you think you may have to use your rifle to defend yourself or others, you'd be far better served by a weekend carbine class from someone like Larry Vickers, Pat Rogers, John Farnam, etc. It does cost more, but you get what you pay for.

Appleseed isn't a tactics course

It teaches the basics. You won't learn to fight, only to shoot your rifle accurately. Having taken tac courses, I can say that too many people jumpt into advanced training ere learning the basics.
